Abstract

A total of 100 random samples of retailed fresh fishes namely. Tilapia nilotica, Bagrus bajad (Bayad), Mullus species (Barbon) and Chrysophyres (Dinise). 25 fishes of each species were collected from different fish markets in Cairo Governorate for bacteriological and mycological evaluation. Different Enterobacteriaceae organisms could be isolated in variant percentages from the examined fishes. These organisms were identified as Enterobacter Cloceae (4%), Escherichia Coli (8%), Citrobacter diversus (4%), Klebsiella pneumonia (12%).Klebsiella oxytoca (16%), Shigella Sonnei (8%), Providencia spp. (4%), Serratia spp. (24%) and Salmonella spp. (0.0%) from Tilapia nilotica, Escherichia Coll (8%), Citrobacter diversus (8%), Klebsiella pneumonias (16%) Klebsiella oxytoca (12%), Shigella Sonnei (4%), Serratia spp. (12%) from Bagrus bajad, Escherichia Coli (4%), Citrobacter (4%), Klebsiella pneumonias (8%), Klebsiella oxytoca (16%), Serratia species (8%) from Mullus species and as Escherichia Coli (4%),Klebsiella pneumonia (12%), klebsiella oxytoca (12%), providencia spp (4%) and serratia species (4%) from Chrysophres. Correlation between the microbiological load and fish species results in no significant difference in the mean total bacterial counts between the mean values of both Tilapia nilotica and Bagrus Bajad, also there is no significant difference between Mullus species and Chrysophyres (P<0.05). But there was a significant difference between the mean values of (Tilapia nilotica and Bagrus bajad) in one side and (Mullus species and Chrysophyres) in the other side . While, there are correlation between the microbiological load and fish species results in statistically significant differences in the mean total Enterobacteriaceae counts between (Tilapia nilotica and Bagrus bajad) in one side and (Mullus species and Chrysophyres) in the other side P<0.05 Also, Correlation between the microbiological load and fish species results in there was a statistical significant difference between the mean of total coliforms counts of (Tilapia nilotica and Bagrus bajad) in one side and (Mullus species and Chrysophres) in the other side P<0.05, but for Enterococci and Staphylococci counts there was a significant difference between (Tilapia nilotica and Bagrus bajad) in one side and (Mullus species and Chrysophres) in the other side . The public health significance of the isolated microorganisms was discussed and the suggestive measures to protect the consumer and produce high quality fish were outlined.
