Abstract A total of 50 :m1noedmeat and sausage (25 samples of each) .ere co11eotel1 from clifterent shops and supermarkets in Assiut and exami,t1edhistoohemically tor the determination Of connective tissue content. The mean valuQ of histologioal examination of minced meat was 18.74. whe:re the highest frequency distribution was 36 which ranged from 17 - 20 ~. As for chemical examine ti on th e mean value was 13. 91-+ 0.47 and th e highe st frequency distribut:Lon (52 %) varied between 12 to 15 %. Regarding sausl3.gesamples. the llElall value of histological eXamination 19M 19.11 + 0.827. while that of chemical exam1nation was 13.94-+ 0.518. The highest frequency disri- buUon of hiBtologil)al examination 44 % end chemical 40 ~ varied from 19 to ~~ % and 14 - 17 % respectively.
