Abstract
One hundred forty random samples of raw milk from bulk tanks, dairy shops, street vendors, UHT milk, Kareish cheese, Domiati cheese and yoghurt collected from different localities in Gharbia governorate were bacteriologically examined for detection of coliforms, isolation and identification of Escherichia coli.
Results of bacteriological examination revealed that examined samples were highly contaminated with coliform organisms.
The mean coliform counts (MPN / 100 ml or /g ) in milk from bulk tanks, dairy shops, street vendors, UHT milk, Kareish cheese, Domiati cheese and yoghurt samples were 8.15 x 105, 3.08 x 1013, 1.23 x 1013 , 2.15 x 102, 5.62 x 1012, 2.46 x 105 and 2.05 x 108, respectively.
Escherichia coli could be detected in 15%, 30%, 35%, 60%, 30% and 30% of the examined samples of raw milk from bulk tanks, from dairy shops, street vendors, Kareish cheese, Domiati cheese and yoghurt, respectively.
The serological identification of the isolated E.coli strains using the available specific antisera revealed the identification of 28 strains belonging to 7 different serotypes : 01 (5 strains), 06 (1 strain); 020 (3 strains); 027 (6 strains); 086 (9 strains); 086 a (one strain); 0167 (3 strains). distributed as follows:
Bulk farm milk 027 (one strain) , 086 (one strain); dairy shops : 01 (2 strians) , 020 (one strain), 086 (one strian). Street vendors : 020 (2 strains) , 027 (one strain) 086 (2 strains). Kareish cheese : 01 (2 strains) , 06 (one strain) , 027 (2 strains) 086 (2 strains), 086a (one strain)
Domiati cheese : 027 (2 strains), 086 (2 strians), 0167 (one strain) Youghurt : 01 (one strian), 086 (one strain) , 0167 (one strian).
Toxigenic strains could be detected in 5 strains produced heat-labile toxin (LT) one strain from each of bulk milk tanks, dairy shops, street vendors milk samples and 2 strains from Kariesh chesse and one strain produced both heat-labile (LT) and heat-stable (ST) enterotoxin from the examined yoghurt samples.
The public health importance of colifonns and the E.coli strains as well as suggested measures for improving the quality of milk and milk products have been discussed.
