Abstract

Since cold storage considered as important means for preservation of meat, poultry , fish and any other food products, this work was done to assess the sanitary status of the cool stores in kalyiobia Governorate. Hundred and fifty samples of stored Meat, fish, poultry, swabs from the walls and air (15 from each) from 2 cool stores( 75 from each ) were examined bacteriologically. and mycologically. The bacteriological examination revealed that , the total colony count from cool store I and II for stored, meat, fish, poultry, swabs from wall and air in an overall log—mean were. 6.498 پ} 5.99 6.523 + 6.05 . 7.433 پ} 6.62 , 5.515 پ}4.82 and 1.839 پ} 0.91 respectively. It was found the that total colony count of cool store I 5.433 پ} 4.08 ) was lower than that of cool store II 5.689 پ} 4.96. The total psychrotrophic counts in an overall log, mean were 5.950 پ} 5.54. 5.961 پ}5.51 , 6.784 پ} 5.94 and 4. 342 پ} 3.74 from the stored meat , fish, poultry and swabs from wall, respectively of cool store I and II It was found that the total psychrotrophic count of cool store I was lower then that of cool store II (log, mean 5.630 i- 5.57 and 5.899 پ} 5. 30, respectively ) Moreover, the total.
