Abstract Sixty random samples of raw milk from bulk tanks , dairy shops and street vendors (20 of each )and twenty samples each of pasteurized milk and UHT- milk were collected from different localities in Gharbia governorates were bacteriologically examined for standard plate and thermoduric counts as well as isolation and identification of thermoduric microorganisms from examined samples . The mean values of aerobic plate count/ml in milk from bulk tanks , dairy shops, street vendors , pasteurized and UHT- milk samples were . 2.6 x 109 ± 1.55x 109 , 1.85 x 10 1° ± 1.49x 10 1° ,3.77x1011 ± 1.90 x 1011 , 4.22 x 107 ± 1.06 x 107 and 3.39 x 105 ± 1.42 x 105 , respectively . The mean values of thermoduric count / ml in milk from bulk tanks , dairy shops , street vendors, pasteurized and UHT- milk samples were 5.41 x 104 + 2.06 x104, 6.41 x105 ± 3.69 x 105 , 4.97 x 10 6 ± 2.70 x 106 , 1.23 x 104 ± 0.57 x 104 and 4.77 x 103 ±1.83 x 103 , respectively. Thermoduric organisms could be detected in all raw milk samples collected from bulk tanks , dairy shops and street vendors . Thermoduric organisms could be isolated from 80% of the examined pasteurized milk samples and 55% of the examined UHT- milk samples . Identefication of isolated strains revealed that Bacillus cereus , B. circulans , B. stearothermophilus, Strept. bovis , Strept. faecalis , Strept. faecium and Micrococcus luteus were detected in examined raw milk samples collected from bulk tanks in percentage of 10 % , 30 % , 35 % , 5 % , 10 % , 10 % and 60 % , respectively . Bacillus cereus, B. circulans, B. licheniformis, B. stearothermophilus , Strept. bovis , Strept. faecalis , Strept. faecium and Micrococcus luteus could isolated from raw milk samples obtained from dairy shops in percentages of 5% , 25% , 5% , 10% , 5% , 10% , 10% , and 70% , respectively . Thermoduric organisms isolated from examined raw milk samples obtained from street vendors were B. cereus (15%) , B. circulans (50%) , B. coagulans (5%), B. macerans (5%) , B. stearothermophilus (20%) , Strept. bovis (10%) , Strept. faecalis (5%), Strept. faecium (15%) and Micrococcus luteus (50%) . from pasteurized milk samples , B. cereus , B. circulans , B. licheniformis, B. stearothermophilus , B. subtilis , Strept. bovis , Strept. faecalis , Strept. faecium , Strept. thermophilus and Micrococcus luteus could be isolated in percentage ranged from 5% to 70 % . B. cereus , B. circulans , B. licheniformis , B. stearothermophilus , B. subtilis , Strept. bovis , Strept. faecalis and Micrococcus luteus could be detected in examined UHT- milk samples in percentage ranged from 5 to 35% . The public health importance of thermoduric organisms as well as suggested measures for improving the quality of milk and heat — treated milk were disccused. |
