Abstract

A total of 130 excised surface samples (80 breast skins and 50 subcutaneous thin tissues- excised aseptically from frozen chicken carcasses and chilled beef hindquarters, respectively ), collected from the student housing of Mansoura University, then analyzed for independent quantitative estimation of mould and yeast contamination levels alongside qualitative typing of the former one.
A sum of 588 mould strains [244 (100 %) strains from frozen chicken & 344 (100 %) strains from chilled beef ] – picked up from all mouldy duplicate enumeration plates of all tested surface samples were distributed as 76 (31.15 %) & 170 (49.42 %) Aspergillus, 121 (49.59 %) & 95 (27.62 %) Penicillium, 11 (4.5 %) & 60 (17.44 %) Alternaria, 6 (2.46 %) & 10 (2.91 %) Cladosporium, 4 (1.64 %) & 1 (0.29 %) Scopulariopsis and 1 (0.41 %) & 1 (0.29 %) Fusarium strains, obtained from both surface samples, respectively. In addition to 20 (8.2 %) Trichothecium roseum, 4 (1.64 %) Acremonium and 1 (0.41%) Curvularia strains recovered only from mould – contaminated samples of frozen chicken, alongside 3 (0.87 %) Paecilomyces, 2 (0.58 %) Botrytis plus 1 (0.29 %) strains each of Drechslera australiensis and Stemphylium isolated only from mould – contaminated samples of chilled beef .
A total of 246 Aspergillus strains [76 (100 %) strains from frozen chicken & 170 (100 %) strains from chilled beef samples] were further distributed as 36 (47.37 %) & 110 (64.71 %) A. niger, 27 (35.53 %) & 51 (30 %) A. fumigatus, 4 (5.26 %) & 4 (2.35 %) A. flavus, 3 (3.95 %) & 4 (2.35 %) A. candidus and 1 (1.32 %) & 1 (0.59 %) A. repens strains obtained from both surface samples, consecutively. Additionally 2 (2.63 %) every of A. versicolor and A. parasiticus, besides 1 (1.32 %) A. wentii strains were exclusively be found in frozen chicken samples.
