Abstract A total of 100 random samples of chicken meat, chicken nuggets, chicken panee and chicken luncheon (25 of each) were collected from different supermarkets in Alexandria governorates. The collected samples were subjected to bacteriological examination for detection of enteropathogens In order to decrease the pathogenicity of these microbes we should making study and isolation of enteropathogens from chicken meat and its products to be sure that the food is safe for human consumption and free from microbe that makes food poisoning. When making bacterial isolation we are obtain results as following: Bacteriological isolation: 1- Salmonella: When making isolation for salmonella the results obtain as follow 56 %, 8%, 12% and 8% from chicken meats, chicken nuggets, chicken panee and chicken luncheon respectively. 2-Escherichia coli: When making isolation for E.coli the results obtain as follow 68 %, 12%, 12% and 8% from chicken meats, chicken nuggets, chicken panee and chicken luncheon respectively. 3-Campylobacter: When making isolation for Campylobacter the results obtain as follow 76%, 16% from chicken meats, chicken panee respectively, and could not be isolated from chicken nuggets and chicken luncheon. 4-Bacillus cereus: When making isolation for Bacillus cereus the results obtained was 60%, 8% and 40 % from chicken meats, chicken nuggets and chicken luncheon respectively, and could not be isolated from chicken panee. 5-Aeromonas hyDROPhila: For isolation of Aeromonas hyDROPhila results obtained was 28 % and 4 % from chicken meat and chicken panee respectively, and could not be isolated from chicken nuggets and chicken luncheon. |
