Abstract

One hundred random samples of cow and buffalo hand
and machine milking (25 of each) were collected from different
localities at Sharkia Governorate, Egypt in a sterile bottle and
transferred to the laboratory in ice-box to maintain its chemical
and microbiological status unchangeable. Each sample was
mixed thoroughly before being divided into three parts. The
first was examined for incidence of mastitis, the second for
chemical examination, while the last one was used for
bacteriological examination.
The results of CMT reveal that 12(48%) of the examined
cow hand milking samples were negative and 13(52%) were
positive while in case of examined cow machine milking
samples 11(44%) were negative and 14(560/0) were positive.
In case of buffalo milk, the results show that 15(60%) of
the examined hand milking samples were negative and
1 0(40%) were positive while in case of examined machine
milking samples 14(56%) were negative and 11(44%) were
positive.
The MSCC/ml. was studied and reveals that negative
samples contained less than 4x 1 05 MSCC/ml., while the
positive ones contained higher numbers of MSCC exceeded
5xl06/ml.
The chemical examination of normal and mastitis cow
hand milking samples reveal that the mean values of fat%,
protein%, lactose%, SNF%, minerals% and chlorides% were
