Abstract

One hundred and sixty random samples from milk and its products, 40 each
of raw milk, kareish cheese, Domiati cheese and Ras cheese samples (samples
were collected from dairy shops and street vendors in Al-Menofia Governorate
for enumeration, isolation and identification of psychrotrophs . The counts was determined by two methods; standared plate count method at 7ºc / 10 days, as well as using rapid method 21ºc for 25 hr. The mean values of psychrotrophs count using standared method were 6.45 ×106, 5.24 ×107, 4.10 ×106 and 1.01 ×106 / ml of raw milk, kareish cheese, Domiati cheese and Ras cheese samples, respectively. While their counts by rapid method were 6.95 ×106, 5.99 ×107, 4.68 ×106 and 1.43 ×106 of raw milk, kareish cheese, Domiati cheese and Ras cheese samples, respectively. Out of 161 isolates of psychrotrophs from raw milk were Pseudomonas fluorescens (37.88%); Flavobacterium spp. (13.043%); Pseudomonas aeruginosa (6.211%) Citrobacter freundii (5.590%); Enterococcus fecalis (6.211%); Pseudomonas putida (5.590%); Staphylococcus aureus (4.968%);
Staphylococcus epidermititis(4.347%) ; Enterobacter cloacae (3.726%);
Pseudomonas alkaligene (3.726%) ; Bacillus cereus (3.726%); Achromobacter
spp. (3.105%) Bacillus subtilis (1.242%) and Bacillus circulance (0.621%). Differentiation of 180 isolates psychrotrophs from kareish cheese revealed that Enterococcus fecalis (23.888%) , Pseudomonas fluorescens (17.222%) ,Torulopsis Candida (15.555%) , Candidakrusi(6.666%) , Geotrichum candidum
(5.555%) , Sachromyces cerevisiae (5.000%) , Staphylococcus epidermititis
(3.333%) , Pseudomonas aeruginosa(3.333%) , Pencillium citrinum(2.777%) , Alternaria alternate (2.777%) , Enterobacter cloacae (1.111%) and Citrobacter freundii (1.111%).
