Abstract In Egypt, there is a big gap (or great shortage) between the production and consumption of vegetable oils, where more than 90% of consumed quantities is imported from the outside. Thus, many researchers studied the physical and chemical properties of traditional and untraditional oils in their attempts to face the high consumption of oil all over the world including Egypt. Cultivating of new short season oil crop such as canola seed in the new Egyptian reclaimed soils seems to be one of the most promising solutions in Egypt. This study was carried out to study the following points: A. Comparative studies on physico-chemical properties, fatty acids composition and unsaponifiable matter composition of sunflower, cottonseed and canola oils. B. The effect of packaging and storage period on the physic-chemical characteristics, fatty acids composition, stability and keeping quality of sunflower oil. C. Improving the keeping quality of the sunflower and soybean oils as well as a mixture of them (50% soybean and 50% sunflower) by addition of: C.1. Some commercially antioxidants. C.2. Different concentration of natural antioxidants from olive leaves and guava leaves. |
