Abstract

A total of one hundred and fifty milk samples (50 each, market raw milk & farm milk and 25 each, pasteurized and sterilized milk) were collected from different dairy shops, small supermarkets and one farm localized around Mansoura city, Egypt, to be examined for the presence of sporeformer psychrotrophic bacteria, specially Bacillus cereus species.
The obtained results indicated that 71% of the examined samples were contaminated with sporeformer psychrotrophic bacteria identified as Bacillus cereus (26.32%), B. thuringiensis (17.54%), B. circulans (16.37%), B. coagulans (13.45%), B. mycoides (9.36%), B. pumilus (7.60%), B. subtilis (4.09%), B. licheniformis (3.51%) and B. sphaericus (1.75%); which may result in the development of sensory defects provoking great economic losses and rendering the milk and or the dairy products unfit for human consumption or causing a public health hazard. Also, it has nbeen recored that the incidence of sporeformer psychrotrophic bacteria was80% with a count ranged from 1.6 X104to 4.5X104 with a mean value of 2.85 X104 ± 0.23 X104 cells/ml raw farm milk while in market raw milk, it was78% with a count ranged from 2.8 X103 to 6.4X103 with a mean value of 4.1X103 ± 0.2X103 cells/ml. on the other hand, The sporeformer psychrotrophic bacteria were found in (76%) of the pasteurized milk samples with a count ranged from 1 X102 to 5X102 with an average count of 2.37X102 ±0.34X102 cells/ml pasteurized milk. While in sterilized milk samples, The incidence of sporeformer psychrotrophic bacteria in sterilized milk was (12%) with a count ranged from zero to 1 with a mean value of 1± 0 cells/ml sterilized milk.
