Abstract

The aim of this investigation was to study the possible benevicial
health effects of barley bread on hyperglycenic rats in companion with
wheat flower bread. Alloxan injected rats were fed on either breads
before sacrificed and serum glucose determined. The influence of added
ginger, black seeds, fennel an the mixture of all was all investigated, the
influence of these breads on side effects of diabetes mellitus were also
studied including serum lipids profile, liver function and kidneys function
along with biological parameters body weight gain (BWG), feed intake
(FI) and feed efficiency ratio of inflicted rats. Histopathological
investigation of internal organ, was also carried out. The results arrived at
revealed the following:
1. Serum glucose was raised in diabetic rats, but decreased when
inflicted rats fed on barley bread (-36.64% decrease compared to
control “+” group). Much greate less decrease (-18.63%) recorded for
wheat flour bread.
2. When barley diet supplemented with ginger, black seeds and fennel
significant more decrease of serum glucose recorded, with
nonsignificant difference between the 3 supplements. Meanwhile the
blend of all 3 supplements showed synergistic action revealing more
decrease of serum glucose in comparison with using a single
supplement.
3. The mixture of the 3 supplements (ginger, black seeds, fennel) raised
the per cent decrease of serum glucose (-26.74%) compared plain
wheat bread diet (-18.63%) and difference was significant, but the
improvement was relatively less mvnounced compared with
supplementation of barley bread diet.
4. The increase of serum triglycerides (TG) was reversed when diabetic
rats fed on barley bread, and the change was significant supplements.
