Abstract

The present study was planned to assess the quality of both natural and formed Tilapia nilotica and Mugil caphalus throug the following examinations :
1.1.Organoleptic examination.
It includes the condition and appearance of skin, eye, gills, flesh,organs,and peritonium,consistency of muscles ,cut surface conditiod, and general smell.
1.2.Microbiological examination.
1.2.1.Determination of aerobic plate count.
1.2.2.Determination of total Psychrotrophic count.
1.2.3.Determination of total Enterobacteriacae count.
1.2.4.Enumeration and identification of Staphylococcus aureus.
1.2.5.Determination of total mould count.
1.3.Chemical examination.
1.3.1.Determination of moisture percent.
1.3.2.Determination of protein percent.
1.3.3.Determination of fat percent.
1.3.4.Determination of ash percent.
