Abstract

Rice oryza sativa L is one of the leading food crops all over the world. It is considered the major source of carbohydrates for more than one-half of the world population. Rice is grown in an area of around 152 million hectares all over the world a total production of 615 million tons F. A .O 2004. In Egypt, rice production reached 6,247,243 tons and the planted area reached 633,360 hectares in 2004 season Annual Book For Agricultural Statistics, 2005. Most of the planted area was devoted to the two rice cultivars, Sakha 104 with a planted area of 83008.8 hectares, and Giza 178, with a planted area of 1191622.4 planted area hectares. Sakha 104 and Giza 178 presented 46.34% of the total national of Egyptian rise Annual Book For Agricultural Statistics, 2005.Rice in Egypt is planted during May and harvested during September / October and most of its total grain yield is consumed all over the year. Fumigants are used for insect control in stored rice grains, and Phosphine has proved to be one of the most powerful fumigants, which has been used for a long time. The effect of any fumigant on seed viability should be taken into consideration. Also, if there was a chemical reaction between a fumigant and constituents of the treated grains, the chemical and physical properties of grains should be taken into consideration. To use rise for human consumption in healthy way and to keep its high nutritional value, it is important to maintain rice grain quality all over the year from time of harvesting to time of its consumption.
