Abstract In Egyptian food stuffs, potato and sweet pepper ere two of the most important vegetable crops. During their agricultural production, ethylene bis (dithiocarbamate) fungicides (•EBDC’s), such as Dithane M-45, Mancoper and Tri-Meltox Fort are being use for controlling of fungal diseases, early blight Alternaria solani and late blight Phytophthora infestans in potato, and powdery mildew Levillula taurica in sweet pepper, under ~ normal field and under plastic tunnels protection conditions. The production of sweet pepper under plastic t unnels protection conditions has become possible during winter using cheap technology. This technique has been started in Egypt a few years ago. In the environment EBDC’s fungicides are u nstable during their manufacturing , formulations, and storage in the presence of heat, moisture and oxygen as well as in treated biological systems. By splitting of carbon disulfide and hydrogen sulphide as well as oxidetive degredat •ion reaction, the formation of a great number of products are produced, most important one among them, is ethylenethiourea , ETU. On the other hand, t he base catalyzed degradation of EBDC-fungicides to ETU during processing of f oods involving heat has been a matter of concern i n recent years. |
