Abstract

In the four decades since the recognition of its nutritional essentiality, the element seleni um (Se) has attracted the growing interest of the biomedical community. The element was first appreciated for its practical value in preventing nutritional Inyopathies and vascular disorders in Livestock. It was the recongition of selenium’s role in glutathione peroxidase 19731 ; preceded by recognition of its In essentiality in the prevention of liver necrosis in vitmnin-E deficient rats(7) that finally brought attention to the nutritional importance of this element althoug our understanding of the function of selenium is still incon1plete. The discovery that selenium deficiency or toxicity could lead to human disease first initiated interest in its role in hll1nan health. This has been stin1ulated by report that selenium supplementation could reverse symptoms of Keshan’ s Disease in China23, and findings of lovv intakes in other regions of the vvorld4. Current research is focused on the function of selenium in the body, with \vhat compounds it is associated, and how it is incorporated. F or these reasons work this research to release the following aim:­ To estimate the level of selenium in some Egyptian foods in the six districts of Alexandria. * West * East * Middle * Mountazah * Goumrok * Amrya The samples were collected from the six districts of Alexandria (300) samples and ten kinds of foods, froln each kind (30) samples. 1- Raw meat. 2- Raw fish 3- Raw fruits 4- Cereals 5- Nuts 6- Raw milk 7 - Pasterized milk 8- Milk Product 9- Sterlized milk 10- Vegetables Salnples wet digestion occures of all smnples and measurment by atomic absorption spectron1etry. Results of the present work showed the following trends:­ 1- Results showed that the highest mean value of selenium level present in Montazah district 0.3076 ug/g, whereas the lower mean value present in rv1iddle district 0.1364 ug/g. The result shows the meat is high content of selenium from othr kinds offood . 2- Results sho\vecl that the highest mean value of selenium level present in Gomrk district 0.2406 ug/g, whereas the lo\ver mean value present in East district 0.0982 ug/g. The result shows the fish also has high content of seleniun1 frOlTI othr kinds of food . 3- Results showed that the highest mean value of selenium level present in West district 0.0208 ug/g, whereas the lo\ver mean value present in Montazah district 0.0044 Ug/g . The result shows the cereals has moderate content ~ ’­ of selenium from othr kinds of food . 4- Results showed that the highest mean value of selenium level present in Amria district 0.0044 ug/g, whereas the lower mean value present in Montazah district 0.0016 ug/g. The result shows the raw milk low content of selenium from othr kinds of food. 5- Results showed that the highest mean value of selenium ..... level present in \Vest district 0.0160 ug/g, whereas the lower mean value present in Amria district 0.0094 ug/g. 6- Results showed that the highest mean value of selenium level present in Middlle district 0.0012 ug/g, whereas the lower n1ean value present in west district 0.0006 ug/g. 7- Results showed that the highest mean value of selenium level present in Gonlrk &East districts 0.0084 ug/g, whereas the lower mean value present in Montazah district 0.0054 ug/g. The result shows the ra\v fruits has very lo\v content of seleniun1 fron1 othr kinds of food. 8- Results showed that the highest mean value of selenium level present in East district 0.0034 ug/g, \vhereas the lo\ver n1ean value present in Montazah district 0.0014 ug/g. The result shows the ra\v vegetables has very low content of selenium from othr kinds offood. 9- Results showed that the highest mean value of selenium level present in Amria district 0.0028 ug/g, whereas the lower mean value present in Montazah district 0.0010 u g/ g. 10- Results showed that the highest mean value of selenium level present in East, i’vliddle & Arnria districts 0.0018 ug/g, \vhereas the lower mean value present in Gomrk district 0.001 ug/g. 11- Results showed that the highest mean value of selenium level present in Gomrk district 0.04508 ug/g, whereas the lo\ver mean value present in Middle district 0.028204 ug/g . the high value in gomrk is may due to the manifactural nature of this district 12- Results sho\ved that the highest mean value of selenium level present in raw meat 0.157433 ug/g, whereas the lower mean value present in Pasterized milk 0.000867 ug/g.^leng
