Abstract
Many universities and research centers pay more attention towards the functional plants. Beside its nutritional value, these plants are exhibiting many pharmacological effects including, scavenging the free radicals, anti-carcinogenic, anti-mutagenic, anti-aging, treatment of obesity etc. Celery (Apium graveolens) is one of the famous Egyptian medical herbs used in treatment of different diseases i.e. hypertensive, diabetes, bleeding inhibition and obesity. Therefore, the present study aims to prepare different celery extracts by using of different chemical methods. Also, the use of these extracts in many nutritional histopathological and therapeutic applications will be in the scope of this study.
