Abstract

A grand total of one hundred samples (50 each of) Indian and Brazilian frozen meat samples were collected from purchased frozen meat from different butcher’s shops and supermarkets at kalyobia governorate and subjected to chemical examination to determine the quality status of Indian frozen meat and comparing its results with those of Brazilian one. - General acceptance indices: 1-1- pH:
The maximum pH value of the examined imported (Indian) frozen meat was 5.50, the minimum was 5.04 with a mean value of 5.35 + 0.37 and for the Brazilian imported frozen meat, the maximum value was 5.51, the minimum was 5.12 with a mean value of 5.34 + 1.48. The ANOVA test (analysis of variance) P-value showed no significant difference between the two compared groups of imported frozen meat samples (P-value 0.30).
1-2- Extract release volume (ERV) (ml):
The maximum ERV value of imported (Indian) frozen meat was 59.17, the minimum one was 11.9 with an average of 41.47+12.03, while for Brazilian samples, they were 60.0, 49.9 and 53.94 + 13.36 respectively.
The ANOVA test of extract release volume of the examined Indian and Brazilian imported frozen meat showed that at P-value 0.001 there is a significant difference between the two groups.
2- Proteolytic indices:
2-1- Total volatile nitrogen (TVN):
The maximum total volatile nitrogen in the examined total volatile imported (Indian) frozen meat was 26.88; the minimum was 2.68, with a mean value of 8.51+1.19. Also, the maximum and minimum total volatile nitrogen of Brazilian sample has the same values of Indian one, while the mean was 10.35+7.13.
The ANOVA test (analysis of variance) P-value showed no significant difference between the two compared groups of imported frozen meat samples (P-value 0.37).
2-2- Urea:
The maximum value of urea in the examined Indian frozen meat was 28.63, minimum was 0.69 with a mean value of 8.79+1.36 while that for Brazilian sample, the maximum was 31.86, and the minimum was 3.54 with a mean value of 10.69 + 1.07. The ANOVA test P-value 0.02 showed no significant difference between the urea values in the two examined compared groups.
