Abstract

Food additives are any substance or mixture of substances other than the basic foodstuff which is present in food as a result of any phase of production, processing, packaging or storage.This study was done to know the toxic effects of BHA& MSG.
Organ weights and histopathology were markedly affected by BHA without significant difference in terminal body weight. Also serum testosterone, thyroxin (T4)&cholesterol levels were affected by BHA treatment. These results indicate BHA caused endocrine disruption effects altering the serum hormones levels and the development and functions of reproductive system.
MSG treatmentcaused significant decrease in catalase activity,whilethe glutathione peroxidase (GPx) activity was markedly increased by MSG treatment. These results indicate that oxidative stress produced by glutamate in vulnerable brain regions may persist for longer periods and mitochondrial function impairment is an important mechanism of excitatory amino acid mediated neurotoxicity in chronic neurodegeneration.
