Abstract
The present study was directed to prepare of diabetic children diets (cake cookie and snack) of high nutritive value and as ablood sugar lowering materials,and investigate the effect of sugar substituation on the chemical and physical properties of orepared bakery products .Replacement sucrose by different levels of natural and artificial sweetener such as stevia and high fructose corn syrup (HFCS) in the preparation of diabetic children.
