Abstract

One hundred and twenty random samples of each of small scale ice cream and large scale ice cream samples collected from groceries , peddlers and supermarkets in Sharkia Governorate were examined for their sanitary condition.
-The results of methylene blue reduction test of examined ice cream samples revealed that 11 of examined small scale samples (9.2%) were graded I, while 28 ( 23.3% ), 57 ( 47.5% ) and 24 ( 20% ) were graded II , III and IV respectively. But in case of examined large scale samples the results of methylene blue reduction test showed that 54 ( 45% ), 14 ( 11.7%) and 52 ( 43.3% ) were graded II, III and IV respectively.
-The bacteriological examination of ice cream samples showed that mean coliform count/g. in examined small scale samples was 4.3×106 ,4.9×106 and 3.2×106 for plain , fruit and chocolate ice creamsamples respectively,while coliform organisms in examined large scale smples recorded 1.4×104 for cups ice cream samples but it was failed to be detected in bars or cones sampes .
-The most prevalent Coliform species isolated from examined small scale ice cream samples were Citrobacter Freundii ,Enterobacter Aerogenes Enterobacter Cloacae,Erwinia
