Abstract

Date was always considered as the most important desert crops all over the world due to its high nutritive and economic values. Consequantly, the countries gave its production a great care, especially having massive yield. The New Valley Covernorate is one of the famous Egyptian Governorates for its date production, amounting to, 750 thousands of fruity date trees.
Among date varieties; Saidy, Balady, Hegazi and Falek represented about 53% and the rest were occupied by the seedling (Manthour) varieties of lower quality characters. The yearly production in the New Valley was Eight thousands Tons, around its half was consumed locally and the other half was manufactured in Xharja Packing Factory.
This study was famous, Saidy date, to present the most processing. rt was Balady and Manthout during preparation, were studied.
focused on the most important and where its ripening stages were compared suitable stage for consumption and also compared (in Rutab stage) with dates. Chemical changes taking place processing and packing in that factory
