Abstract

This work aimed to detect the sanitary condition of some processed milk products sold in Beni-Suef city.
One hundred and twenty random samples of large scale products (UHT milk, yoghurt, stirred yoghurt, laban rayeb) and small scale products (yoghurt and laban rayeb), (20 of each) were collected from the supermarkets and dairy shops at different localities in Beni – Suef city. All samples were exposed to sanitary and microbiological examination.
 Determination of the titratable Acidity:-
The mean values of titratable acidity in UHT milk, large scale yoghurt, large scale stirred yoghurt, large scale laban rayeb , small scale yoghurt and small scale laban rayeb were 0.10 ± 0.004 , 0.77 ±0.01 ,0.72 ± 0.01 , 0.72 ± 0.01 , 0.75 ± 0.01 and 0.70 ± 0.01,respectively.
 Microbiological examination :-
• Total bacterial count :-
Aerobic bacterial count failed to be detected in the examined samples of UHT milk (<10 ± 0).
• Total coliforms were present in mean counts of <3 ± 0 , <3 ± 0 , <3 ± 0 , 2.3 × 101 ± 1.6× 101 , 4.1× 103 ± 1.9× 103 and 4.5 × 103 ± 1.9 × 103 coliforms /ml or gm in the examined UHT milk , large scale yoghurt, large scale stirred yoghurt , large scale laban rayeb , small scale yoghurt and small scale laban rayeb respectively, while the mean values of Faecal coliform count in the same samples were <3 ± 0 , <3 ± 0 , <3 ± 0 , 2.3× 101 ± 1.6× 101 , 3.6 × 103 ± 1.9 × 103 and 1.3 × 103 ± 6.3 × 102 coliforms / ml or gm,respectively.
• The positive – Coagulase Staphylococcus aureus present in mean counts of < 102 ± 0 cfu /ml or g in the examined UHT milk, large scale yoghurt , large scale stirred yoghurt , large scale laban rayeb . While, the mean values in small scale yoghurt and small scale laban rayeb were 70 ± 70 and 1.9× 103 ± 7.7 × 102 cfu / ml or gm, respectively.
• The mean values of Enterococci in the examined UHT milk , large scale yoghurt, large scale stirred yoghurt, large scale laban rayeb , small scale yoghurt and small scale laban rayeb were < 102 ± 0 , 6.9 × 103 ± 5.3 × 103 , < 102 ± 0 , 6.3 ×102 ± 4.5 ×102 , 1.6 ×104 ± 7.2 ×103 and 2.6× 105 ± 1.1 ×105 cfu / ml or gm,respectively.
• Total aerobic spore forming bacteria:
The mesopillic aerobic spore forming bacteria was detected only in the examined large scale stirred yoghurt with a mean value of 1.4 × 104 ± 6.8 × 103 cfu / gm and not detected in all the other examined samples while, the phychrotrophic aerobic spore forming bacteria could not be present in any of the examined samples.
• The mean values of Total yeasts and molds count were <10 ±0 cfu/ml or gm for the examined UHT milk , large scale yoghurt , large scale stirred yoghurt . While were detected in, large scale laban rayeb, small scale yoghurt and small scale laban rayeb with mean counts of 10 ± 10 , 5.2 × 104 ± 1.9 × 104 and 9.9 × 105 ± 6.9× 105 cfu /ml or gm,respectively.
• Incidence of isolated pathogens:
• Escherichia coli was detected in 2(10%), 6(30%) and 3(15%) of the examined large scale laban rayeb ,small scale yoghurt and small scale laban rayeb, respectively , but could not be isolated from UHT milk , large scale yoghurt and large scale stirred yoghurt samples.
• Staphylococcus aureus could be isolated from 1(5%) and 7 (35%) from the examined small scale yoghurt and small scale laban rayeb, respectively. On the other hand it failed to be detected in the samples of UHT milk, large scale yoghurt, large scale stirred yoghurt and large scale laban rayeb.
The sanitary and public health significance of the isolated organisms as well as the the recommendations to be followed in production , handling and storage of such dairy products were discussed.
