Abstract Meat is the most important source of food for people in every where as it supply the consumers with the needed nutritive elements such as high quality proteins, including essential amino acids, B-complex vitamins which is absent in plant foods and certain minerals especially iron and phosphorous beside that meat has high calories value. Meat products are considered one of the most products which attract the consumers for its palatability, low price and easily preparation than fresh meat. A total of 80 samples were taken from the meat products including minced meat, burger, sausage and luncheon were collected from different super market at Sharkia governorate to be examined bacteriologically for detection of Enteropathogenic Escherichia coli microorganism. the obtained results indicated that the mean value of most probable number of coliforms(MPN) of the examined meat products sample were 2.57 x 105 ± 8.69 x 104,3.09 x 105 ± 1.05 x 105, 3.02 x 105 ± 9.06 x 104and 6.2 x 104 ± 1.02 x 104 Minced meat, Burger, Sausage and luncheon respectively. This results revealed that no significance difference in total coliform count and the major distribution of total coliform count was 104 - <105 (25%), >106 (25%), 104 - <105(30%), 103 - <104 (45%)for Minced meat, Burger, Sausage and luncheon respectively. |
