Abstract This investigation was aimed to study the morphological, chemical, bacteriological and organoleptic properties Bolti fish from three sources in Kafr El-Sheikh governorate.The samples were caught from Borrolus lake near of Elshakloba.Private equatic fish farm in Damro and Rosetta branch locations.The study was conducted on grilled Bolti fish caught from the three fishing locations and grilled with and without viscera in either house or local market. |
