Abstract The aim of this present study was prepared bread formulas by using banana peels with ratio 0,5,10,15,20 and 25%as the high source of fibers for nutrition of obesity and diabetic patient. Chemical,microbiological and organoleptic were evaluated. Biological analysis of some parameters and histopathological examination of animal organs were also studied. The obtained results were as follows as: 1-Banana peels contained the higher value of crude fibers (12.6%);ash content (7.93%);carbohydrates (71.31%) and low fat. 2-Prepared bread contained the higher value of crude fibers and minerals,especially potassium. 3-Microbiological evaluation showed that,all formulas were in the permissible limits. 4-Sensory evaluation showed that,all formulas were acceptable,especially prepared bread by using banana pulls with ratio 5,10 and 15%. 5-Liver Function,ALT and AST engyme activity of rats serum fed on prepared formulas diets showed significan decrease as compared to control group. 6-Kidney function as urea,Creatinine and uric acid of serum of animals showed significant decrease as compared to control group. 7-Lipid parameters such as cholesterol,Triglyceride,HDL-c, LDL-c and VDL-c of serum rats fed on prepared bread formulas showed significantly decreased as compared to group of rats fed on control diet. 8-Final body weight of rats and relative weight of orgas were significant decrease,as compared to rats fed on control diet. 9-Glucose of serum of rats showed significant decrease in group of animals fed on prepared bread as compared to animal fed on control diet.Histopathological examination for liver,Kindny and heart of all animals group either fed an prepared diets or standard diet was normal. |
