Abstract

Fast and oile are important parts the human diet providing concentrated sources of energy essential nutrients Fats and oile are also functional ingredients in large variety food products. The type of dispersion , the amount of solid fat present and the shape , size and interrelationship of the fat crystals have often a strong influence on the behaviour of the entire sys-lem Today , because of increasing concern about the health effects and en-vironmental impact of conventional solvent , and consumer demand for new , improved ,more natural and high quality products , supercritical car – bon dioxide ( SC-CO2) are beginning find considerable interest as an ideal solvent for the oil industries .
