Abstract A total of one hundred random samples of imported frozen boneless beef meat of different cuts were collected from Alexandria Sea Port. These samples were transferred directly to the laboratory where they were examined organolepticafly, chemically and microbiologically for assurance of quality. The obtained results can summarized as follow: 1- Organoleptic examination Colour Normal colour was detected in 95% of the examined samples, while other abnormal colours were detected in 5% of the examined samples and all of the examined samples were free from mould growths. Odour Acceptable odour was detected in 96% of the examined samples, while unacceptable odours were detected in 4% of the examined samples. Consistency Normal consistency was detected in 97% of the examined samples, while abnormal consistency was detected in 3% of the examined samples. |
