Abstract

A total of seventy five samples of vacuum packaged, ordinary packaged and retailed imported frozen meat ( 25 of each ) were randomly collected from different freezing stores and supermarkets of different sanitation levels at Alexandria governorate.
The collected samples were examined bactenologically for total psychrotrophic count and determination of the incidence of some microorganisms of public health hazard. The obtained results revealed that the total psychrotrophic count of the examined vacuum packaged ordinary packaged and retailed imported frozen meat samples ranged from 2.8x103 to2.3x105,4x103to6.8xlO5and6.5x103 to 6.4 x i07 with mean values of 7.1 x ± 2.1 x I ü, 1.5 x ± 3.7 x and 5 x 106 ± 2.8 x i06 respectively. The mean value of the total psychrotrophic count in the examined retailed imported frozen meat samples was significantly higher than the others.
The total Pseudomonas count of the examined vacuum packaged, ordinary packaged and retailed imported frozen meat samples ranged from 2.4 x 102 to 7 x 2.1 x 102 to 1.3 x and 4.2 x i02 to
6.6 x with mean values of 1.3 x ± 5.6 x ,3.9 x i0 ±
1.1 x and 1 x i05 ± 4.3 x respectively. The mean value of Pseudomonas count of the examined vacuum packaged imported frozen meat was significantly lower than that of the same counts of the examined retailed imported frozen meat samples.
