Abstract

This investigation included the examination of 300 spoiled balady eggs at d[ferent stages of spoilage. The examined eggs were collected from different egg shops in Cairo and Giza GovemoratesTotal colony count (T.C.C.) of the egg shell surfaces and egg contents was made for each of the examined eggs, to detect the relation between T.C.C. of the egg shell surface and that of the egg contents.
It was noticed that in spite of the high incidence of the lightly contaminated eggs shell surface the percentage of intermediate and heavy spoiled eggs was high This indicates faulty storage conditions of unfavorable temperature and relative humidity with long storage period of the marketable balady eggs.
The types of bacteria associated with egg spoilage was isolated from both the egg shell surfaces and the egg contents of the examined eggs then identified the result was as follows:
1. The incidence of isolation of Gram - positive and Gram-negative bacteria was differed from bacteria isolated from the shell and that isolated from the contents. It was found that the Gram-positive bacteria were predominated over Gram -negative bacteria isolated from the egg shell surfaces.
